Don\u2019t freak out over the cook time because, again, the crock-pot will be doing the hard work, not you!<\/p>\n<p><strong>Prep Time:<\/strong>\u00a010 minutes<br \/>\n<strong>Cook Time:<\/strong>\u00a08 hours<br \/>\n<strong>Total Time:<\/strong>\u00a08 hours, 10 minutes<\/p>\n<p><strong>Servings:<\/strong>\u00a06<\/p>\n<p><strong>Ingredients:<\/strong><br \/>\n1 pound boneless, skinless, chicken breasts<br \/>\n2 cans of white beans, drained and rinsed<br \/>\n14.5 oz can diced tomatoes<br \/>\n2 cups chicken broth<br \/>\n1 medium onion, chopped<br \/>\n3 medium carrots, chopped<br \/>\n3 garlic cloves, minced<br \/>\n1 bay leaf<br \/>\n1 \u00bd tablespoons crushed red pepper (optional)<br \/>\n\u00bc teaspoon salt<br \/>\nDash of pepper<\/p>\n<p><strong>Directions:<\/strong><br \/>\n1.\u00a0Place chicken breast in Crock-Pot.<br \/>\n2.\u00a0Pour remaining ingredients over chicken.<br \/>\n3. Set\u00a0Crock-Pot on \u201clow\u201d and cook for 7 hours.<br \/>\n4.\u00a0Remove chicken breasts from Crock-Pot. Shred chicken breast with two forks.\u00a0 The chicken will be extremely tender, so this will be easy!<br \/>\n5.Return chicken to Crock-Pot and cook for one more hour.<br \/>\n6.
