{"id":746,"date":"2018-05-15T11:12:44","date_gmt":"2018-05-15T15:12:44","guid":{"rendered":"http:\/\/pages.vassar.edu\/hvagriculture\/?p=746"},"modified":"2018-05-15T11:12:44","modified_gmt":"2018-05-15T15:12:44","slug":"visiting-a-farm-to-table-restaurant","status":"publish","type":"post","link":"https:\/\/pages.vassar.edu\/hvagriculture\/2018\/05\/15\/visiting-a-farm-to-table-restaurant\/","title":{"rendered":"Visiting A Farm-To-Table Restaurant"},"content":{"rendered":"<p><span style=\"font-weight: 400\">For my personal \u201cfarm visit,\u201d I visited a farm-to-table restaurant with my family in order to gain some insight as to how local farmed food is served at an establishment that cooks with local ingredients (and also to eat a delicious meal). \u00a0The restaurant I visited is called Nic L Inn Wine Cellar on the Hudson is located at 135 N Water St, Poughkeepsie, just up the street from the Hudson River.<\/span><\/p>\n<p><a href=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3111.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-747\" src=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3111-300x225.jpg\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3111-300x225.jpg 300w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3111-768x576.jpg 768w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3111-1024x768.jpg 1024w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p><span style=\"font-weight: 400\">While we sat down, the owner of the restaurant came to the table to explain some information about their operation. \u00a0They proudly told us that they were a farm-to-table that used mostly local ingredients that are farm-fresh, and pointed out that various local farms were listed on the menu. \u00a0In addition to being a farm-to-table, the restaurant also made their own pasta, made their own in-house sausage, served local beer, etc. Their cheese board included three types of cheeses from Sprout Creek, including their Toussaint, Kinked, and Margie. \u00a0The chicken I ordered came from Murray Farm in Fallsburg, NY. Other farms were listed next to some of their other dishes, including Dashing Star Farm from Millterton, NY, and the Hudson Valley Cattle Company from Woodridge, NY. Their specials were written on a blackboard on the wall, which also listed other farm names. \u00a0However, much of their produce was not listed as being from a specific farm, despite the owner\u2019s claim of local ingredients. <\/span><\/p>\n<p><a href=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3074.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-749 size-medium\" src=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3074-e1526396999239-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3074-e1526396999239-225x300.jpg 225w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3074-e1526396999239-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a> <a href=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3073.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-750 size-medium\" src=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3073-e1526397028147-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3073-e1526397028147-225x300.jpg 225w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2018\/05\/IMG_3073-e1526397028147-768x1024.jpg 768w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/p>\n<p><span style=\"font-weight: 400\">There was certainly an element of luxury to this type of establishment, which was very interesting to me. \u00a0I often wondered throughout some of our farm visits: who is this food being grown for and served to?
