{"id":173,"date":"2014-05-01T22:57:59","date_gmt":"2014-05-02T02:57:59","guid":{"rendered":"http:\/\/pages.vassar.edu\/hvagriculture\/?p=173"},"modified":"2014-05-01T22:57:59","modified_gmt":"2014-05-02T02:57:59","slug":"from-tomatoes-to-tomato-sauce","status":"publish","type":"post","link":"https:\/\/pages.vassar.edu\/hvagriculture\/2014\/05\/01\/from-tomatoes-to-tomato-sauce\/","title":{"rendered":"From Tomatoes to Tomato Sauce"},"content":{"rendered":"<p><!--\nP { margin-bottom: 0.08in; }\n--><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">After weeks of exploring <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">various farms <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">in the Hudson Valley <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">last Friday <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">we got to see where some of that food goes at Farm to Table Co-Packers, where fresh produce <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">is <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span>turned in to value-added products and packaged to be sold.<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-182\" alt=\"Value-Added Products\" src=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_002311.jpg\" width=\"4288\" height=\"2848\" srcset=\"https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_002311.jpg 4288w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_002311-300x199.jpg 300w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_002311-1024x680.jpg 1024w\" sizes=\"auto, (max-width: 4288px) 100vw, 4288px\" \/><\/span><span style=\"font-size: medium\">The company was founded by Jim Hyland, who realized there were a lot of people like himself that wanted healthy, local food during the winter and a lot of farmers who aren&#8217;t able to sell their surplus during the harvest season and so <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">had<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> to let it go to waste. He created Farm to Table Co-Packers s<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">o that the two problems could solve each other; <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">surplus <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">food in the harvest <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">could be absorbed and turned into products with a higher shelf-life, allowing farmers to sell and people to buy all year <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">round <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">instead of just during the short harvest <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">season<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">. He is his own best customer, <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">with his other business, <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"><a title=\"Winter Sun Farms\" href=\"http:\/\/www.wintersunfarms.com\/\" target=\"_blank\">Winter Sun Farms<\/a>, <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">flash-freezing <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">local produce during the harvest season <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">at Farm to Table Co-Packers. <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">Winter Sun then distributes the frozen food during the winter to those who&#8217;ve purchased a membership, like a CSA farm would distribute food in the summer.<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-190\" alt=\"Liquid Nitrogen Flash Freezer\" src=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0114.jpg\" width=\"4288\" height=\"2848\" srcset=\"https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0114.jpg 4288w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0114-300x199.jpg 300w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0114-1024x680.jpg 1024w\" sizes=\"auto, (max-width: 4288px) 100vw, 4288px\" \/>W<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">e saw the machine <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">where<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> produce <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">is<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> frozen with liquid nitrogen and the freezer where <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">the food is<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> stored afterwards. <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">There were <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">many other machines as well, such as a corn shucker and vegetable washer that<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> had been modified from a dishwasher left over from when the building was an IBM cafeteria. Some clients provide recipes to make goods like tomato sauce or jam, which the company does as well. After fresh food like tomatoes or cucumbers are made into value-added product<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">s<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> like tomato sauce or pickles, they then must be packaged, put in jars, labeled, boxed, and transported to the clients who will sell them, whether that be at a supermarket or a farmers markets.<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-175\" alt=\"Pickles Ready to be Labled\" src=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/IMG_0648.jpg\" width=\"5184\" height=\"3456\" srcset=\"https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/IMG_0648.jpg 5184w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/IMG_0648-300x200.jpg 300w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/IMG_0648-1024x682.jpg 1024w\" sizes=\"auto, (max-width: 5184px) 100vw, 5184px\" \/>Farm to Table Co-Packers <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">has <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> many clients with food coming <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">in <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">from <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">as far as Mexico to keep them working during the winter, but <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">the company<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> was founded for <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">local farmers, so they are very flexible <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">in<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> dealing with small farms. The creation of value-added products not only allows farmers to sell their surplus harvest to places like Winter Sun, they can also get their own products back with a longer shelf-life. This means they can keep stands open at farmers markets for longer, bringing in more income and creating more customer loyalty. The relationship with local farmers is also good for the co-packers as the parts of the fruits and vegetables that can&#8217;t be used can be picked back up by the farmers to be used as compost, which means the co-packers don&#8217;t have to deal with the waste.<img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-185\" alt=\"\" src=\"http:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0144.jpg\" width=\"4288\" height=\"2848\" srcset=\"https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0144.jpg 4288w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0144-300x199.jpg 300w, https:\/\/pages.vassar.edu\/hvagriculture\/files\/2014\/05\/DSC_0144-1024x680.jpg 1024w\" sizes=\"auto, (max-width: 4288px) 100vw, 4288px\" \/>When touring <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">Farm to Table Co-Packers <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">it was impressed on us how complicated an operation it is, organizing various suppliers and farmers and clients, meeting their <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">different<\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\"> needs, transporting goods that need to be <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">kept <\/span><\/span><\/span><span style=\"color: #000000\"><span style=\"font-family: TimesNewRomanPSMT,serif\"><span style=\"font-size: medium\">frozen or refrigerated, keeping up with changing food safety levels, and running basically 24\/7 during the harvest season.
